How do I store your shelled ("live") oysters?
When you receive your oysters, you can either ice them, or you can remove them and put them in standard refrigeration (between 35-45 degrees). If you really want to stretch out the shelf life, you can arrange the oysters cup-side down (takes the stress off the muscle that holds the shell together) and drape them with a wet paper towel. In the winter, when oysters are dormant, you can sometimes extend the shelf life up to a month. NOTE: Do not let your oysters sit in water (that includes melted ice), as the oysters will attempt to "feed" and soon thereafter die.
